I've recently been writing about tweaks I've made to tried and true recipes that I love. Everything from pork chops to the Thanksgiving leftovers get the makeover treatment. So it's no wonder that one of my favorite breakfast treats, oatmeal baked in a pumpkin, also received a little presto chango recently:
With items like eggnog and dried cranberries on hand, it was only natural that I took the original recipe and changed it a bit. Instead of skim milk, half and half, and an egg, I used one generous cup of eggnog in the oatmeal and I used the cranberries instead of the golden raisins. I also left out the apple and opted to scoop more of the roasted pumpkin out with each bowl of steamy, delicious oatmeal. I've gotta say, this might be one of my new favorite ways to use eggnog! Will be stocking it regularly in my home over the holidays for both sipping and adding to yummy dishes like oatmeal.
