With fall upon us this year, it's time to think of what to do with all the pumpkin seeds. Whether you purchase pumpkins or grow your own, there will be plenty of seeds to prepare. Pumpkin seeds are a great treat for the kids as well. They are very nutritious.
Of course, the seeds can be eaten raw, however I prefer to roast them. Pumpkin seeds can be roasted plain or salted. Try these recipes and let me know what you think.

Pumpkin Seeds
- 1 lb. pumpkin seeds, cleaned
Spread the cleaned seeds evenly on a baking pan. Bake in the oven at 375 degrees for 45 minutes to 1 hour, stirring them every 10 to 15 minutes for even roasting.
- Yields: 8 servings
- Preparation Time: 1 hour, 20 minutes
Salted Roasted Pumpkin Seeds
- 1 lb. pumpkin seeds, cleaned
- 1/2 lb. salt dissolved in 1 gallon of water
Boil the cleaned seeds in salt water for 20 minutes. Spread the cleaned seeds evenly on a baking pan. Bake in the oven at 375 degrees for 1 hour, stirring them every 10 to 15 minutes for even roasting.
