Too busy this month for a proper breakfast? Nonsense! This healthy recipe is fast and tasty. If you have your fruit already prepared in refrigerated containers, you can have breakfast made in the time it takes to make your coffee. So treat yourself to a proper, speedy breakfast this month. With all there is to do out there, you'll need it!
While I have included kiwi, banana, and grapes in this rendition, there's no end to the possibilities out there. Use what's in season and on hand. Some suggestions include: mandarin oranges, pineapple, peaches, pears, strawberries, cherries, and apples.
Breakfast Parfait
- 1/2 ripe banana, peeled and sliced
- 3 T. granola
- 1 tsp. honey
- 1 small kiwi, peeled and sliced
- several grapes
- 1 c. low fat vanilla yogurt
Layer the following in an 8 ounce drinking or dessert glass:
- banana
- 1 T. granola with 1/2 tsp. honey
- 1/3 c. vanilla yogurt
- kiwi
- banana
- 1/3 c. vanilla yogurt
- 1 T. granola with 1/2 tsp. honey
- banana
- kiwi
- 1/3 c. vanilla yogurt
- grapes and 1 T. granola
The amounts and layering technique are not exact. Feel free to change the amounts and/or layers according to your specific tastes.
