Air Fried Shishitos & Asparagus

If you were fascinated by the side in the photo of the Air Fried Cajun Shrimp over Parmesan Polenta we featured last time, I have great news for you. Those air fried shishito peppers and tender asparagus are being featured right now! Read on for the low down on how to get them on your plate!

Shishito peppers are regularly in stock in my Asian market, but I've found them beginning in late spring and through late summer in my grocery store (as well as at Trader Joe's) and in July through September at my farmers markets. But check your places carefully as the availability in Wisconsin is likely to vary widely from other places. I like to use medium thickness asparagus for this dish - smaller than is ideal for a the grill, but larger than the diameter of an average pencil. If you don't have olive oil spray, feel free to toss the vegetables gently with a scant teaspoon of olive oil before adding them to the basket of your air fryer. I like using the spray since I use less and get things coated a bit more evenly that way. Use a seasoning blend that makes you happy, but aim for something with a bit of garlic flavor as both of these vegetables play well with it!

Now, these air fried goodies obviously pair well with the Air Fried Cajun Shrimp over Parmesan Polenta we featured on Wednesday, but they are also great with just about everything that comes off the grill, out of the garden, or just on their own. In fact, I've been known to make a batch and serve them picnic style with cheese, fruit, nuts, and a fresh baguette. And, of course, I'm sharing them now because I think they are sure to be a hit with the dads out there on Father's Day. Enjoy!

Air Fried Shishitos & Asparagus

  • 8 ounces shishito peppers - you can find them at farmers markets, some grocery stores, Asian markets, and Trader Joe’s
  • 8 ounces fresh asparagus, trimmed and cut into 1" pieces
  • Olive oil spray
  • 1 teaspoon garlic-heavy seasoning - I used Kinder's Woodfired Garlic Seasoning

Spray the shishito peppers and asparagus all over with olive oil.

Set the air fryer to cycle at 400°F for 8 minutes.

Transfer the vegetables to the air fryer and cook, shaking the basket halfway until soft and slightly charred and blistered.

Sprinkle with the seasoning and serve warm. Enjoy!
