- 2 cups heavy cream (1 pint)
- 2 tablespoons vanilla
- 1 (14 oz.) can sweet condensed milk
- Neon pink food coloring
- Neon purple food coloring
- Neon blue food coloring
- Neon green food coloring
- Rainbow sprinkles
In a stand mixer, whip heavy cream and vanilla together for a few minutes until stiff peaks form.
Add the sweetened condensed milk and whisk until combined.
Separate the mixture into 4 bowls.
Tint each bowl of ice cream base mixture with a few drops of each of one of the neon food coloring - one color for each bowl. Mix well. Add more food coloring and mix if desired.
You should end up with one bowl of pink ice cream base, one bowl of purple ice cream base, one bowl of blue ice cream base, and one bowl of green ice cream base.
Spoon the ice cream base mixtures into a metal pan, alternating spoonfuls of color. Once all of the ice cream base is in the pan, take a knife and run it through the pan in a figure 8 a few times to swirl the ice cream colors.
Sprinkle the top with rainbow sprinkles.
Freeze for several hours or overnight until fully frozen, covering the top with aluminum foil.
