- 1 cup corn kernels
- 1 small red pepper, seeded and chopped
- 1 large tomato, chopped
- 1 avocado, seeded and diced
- 1 T. red wine vinegar
- 2 T. extra virgin olive oil
- Salt and pepper, to taste
Mix all ingredients together in a medium bowl and serve.
