Thai Cucumber Pea Salad

  • ¼ cup rice vinegar
  • 2 tablespoon maple syrup or honey
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fish sauce
  • 1 teaspoon everything bagel seasoning
  • ½ teaspoon chili flakes
  • 1 English cucumber, halved lengthwise and sliced
  • 1 cup chopped pea pods
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro

Make the dressing by adding the rice vinegar, maple syrup or honey, toasted sesame oil, fish sauce, and chili flakes to a jar with a lid. Shake it well to mix.

Add the sliced cucumbers, chopped pea pods, chopped green onion, and chopped cilantro to a salad bowl.

Pour the dressing over the top and toss well to coat. Serve right away.
