- 16 oz. frozen tater tots (half a bag)
- 8 oz. bulk breakfast sausage
- ½ c. diced onion
- 2 c. hearty greens (turnip or beet greens, spinach, or kale would all work nicely)
- 2 eggs
- 2 oz. shredded sharp cheddar cheese
- 2 oz. crumbled blue cheese
Preheat the oven to 425° F. Bake the tater tots according to the package instructions and split into two large serving bowls; set aside. Ten minutes before the tater tots are finished cooking, begin preparing the rest of the recipe.
In a medium skillet, fully brown the breakfast sausage. In the last 5 minutes of cooking, add the diced onion and greens to the sausage and cook until the sausage is fully cooked through, the onions are soft, and the greens are wilted. Split the sausage mixture among the two bowls containing the tater tots; set aside.
Cook the eggs in the same skillet to your desired level of doneness - I like my eggs over medium. Place an egg over each bowl and sprinkle with the shredded and crumbled cheese and serve immediately.
