- 2 boneless skinless chicken thighs (about 6 oz. each), pounded flat
- 2 tsp. cajun seasoning
- 2 T. mayonnaise
- 1 tsp. smoked paprika
- ½ tsp. granulated garlic
- ½ tsp. ground chipotle pepper
- 2 biscuits - I used cheddar cheese biscuits
- 2 slices tomato
Rub the thin chicken thighs with the cajun seasoning on all sides and either cook in a very hot panini press or in a very hot skillet. The chicken should be cooked through and fairly seared on the outside. Remove to a plate and keep warm.
Combine the mayonnaise, smoked paprika, granulated garlic, and chipotle pepper to make a seasoned sandwich spread.
Slice the biscuits in half and spread the seasoned sandwich spread generously on both cut sides of each biscuit. Add the tomato and the warm chicken. Serve immediately.
