- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- ¾ cup sugar
- ¾ cup packed brown sugar
- 1 teaspoon vanilla
- 1 cup pumpkin puree
- ½ cup butter, melted and slightly cooled
- 2 eggs
- ¼ cup milk
Preheat the oven to 350°F. Prepare the pan brushing the nooks and crannies with melted coconut oil or use baking spray containing flour.
In a bowl, combine the flour, baking powder, soda, spices and salt; set aside.
In a large bowl, combine the sugars, vanilla, pumpkin, eggs, and butter until smooth.
Add the flour mixture and milk and combine all of the ingredients. Pour the batter into the prepared pan. Tap the pan on the counter gently to remove any bubbles.
Bake in the preheated oven for about 45-60 minutes or until the loaf is done - when a toothpick inserted in the center comes out clean.
Cool the loaf on a rack for 10 minutes, then turn out onto the rack to cool completely.
