I prepared this simple soup last week and it was quite good. It also took about 10 minutes to prepare using some of the fresh vegetables from my garden.
- 5 large prawns, shelled
- 1 can chicken broth plus 1 can water
- A few drops of sesame oil for flavor
- Salt and pepper to taste
- 1 small bundle of rice noodles (about 2 oz.)
- 1 hand full of snow peas
- 1 green onion, diced
- A few sprigs of cilantro for garnish
Heat the broth plus water is a small pot over medium heat. Add salt and sesame oil. When the water begins to simmer, add the shrimp and rice noodles to the pot. Add salt and pepper to taste. When the broth begins to simmer again, add the snow peas and diced green onions. Turn off the heat and add the cilantro for garnish.
If you like, you can add a little soy sauce in place of the salt, or some sirachi sauce to spice it up a bit. Enjoy!
