- 1 small head butter lettuce or 4-5 c. chopped lettuce of your choice
- 1 large carrot, coarsely shredded
- 1 purple daikon root, coarsely shredded
- 1 red beet, coarsely shredded
- ⅓ c. pepitas
- 1-2 vine-ripened tomatoes, sliced into wedges
Prepare all of the vegetables and toss together in a large serving bowl. Dress lightly or sprinkle with a light seasoning if preferred. Enjoy immediately or lightly chilled, avoiding refrigerating for more than two hours.
