Radicchio-Orange Salad

  • 2 navel oranges
  • 1 head radicchio, chopped
  • 4 c. packed spinach leaves, chopped
  • 1 T. soy sauce or gluten free tamari
  • 1 T. toasted sesame oil
  • 1 T. rice vinegar
  • 1 tsp. honey

Prep the fruit and vegetables and place them in a large bowl; set aside.

Place the remaining ingredients (soy sauce through honey) in a jar and shake well until everything is well-combined. Toss the dressing with the prepared fruit and vegetables and plate - serve immediately.
