- 10 oz. mixed greens
- 4-6 sweet mini peppers, seeded and chopped
- ¾ c. chopped mixed grape tomatoes
- ½ c. chopped cucumber
- ½ c. pitted kalamata olives, sliced
Prep all of the ingredients and toss together in a large salad bowl. Dress your salad as you like. Serve alongside your favorite dishes or tucked into pitas or sandwiches.
