Quick Mediterranean Salads

  • 10 oz. mixed greens
  • 4-6 sweet mini peppers, seeded and chopped
  • ¾ c. chopped mixed grape tomatoes
  • ½ c. chopped cucumber
  • ½ c. pitted kalamata olives, sliced

Prep all of the ingredients and toss together in a large salad bowl. Dress your salad as you like. Serve alongside your favorite dishes or tucked into pitas or sandwiches.
