Prosciutto Pear Naan Pizzas

  • 1 shallot, finely sliced
  • 1 tsp. bacon fat (or other cooking fat)
  • 1 pkg. naan flatbread
  • ⅓ c. chopped radicchio
  • 1 large ripe pear, cored and sliced thinly
  • 4 oz. prosciutto, torn
  • 2 oz. shredded cheese (I used Mellage from Carr Valley Cheese)
  • 1-2 T. pomegranate molasses or aged balsamic vinegar

Preheat the oven to 400° F.

Fry the shallot in the bacon fat (or cooking fat of your choice) over medium heat until crisp.

On the naan, arrange the fried shallots, chopped radicchio, sliced pear, torn prosciutto, and shredded cheese. Bake in the preheated oven for 10 minutes or until the prosciutto is crisp and the cheese is melted. Remove from the oven to serving plates and drizzle lightly with pomegranate molasses or balsamic vinegar.
