Pork & Bacon Burritos

  • 8 oz. thick cut bacon, cut into pieces
  • 1 lb. thinly sliced lean pork
  • 1 small yellow onion, peeled and chopped
  • 1 T. taco seasoning
  • 1 cup salsa - choose a variety you love
  • 3 large burrito flour tortillas
  • 8 oz. shredded sharp cheddar cheese
  • Diced avocado, sour cream, and additional salsa, for serving

Fry the bacon, pork, and onion together until the meat is cooked through and lightly crispy. Add the taco seasoning and 1 cup of salsa and stir to evenly cover the meat in sauce.

Heat a panini press to medium-high heat while you assemble the burritos.

Evenly divide the meat mixture between the 3 flour tortillas and sprinkle evenly with the shredded cheese. Fold and seal the wraps around the filling (here's a good guide to doing that) before placing them on the panini press and closing it to toast the burritos for 5-8 minutes or until lightly browned.

Slice each burrito in half and serve with diced avocado, sour cream, and more salsa for dipping.
