- 8 oz. breakfast sausage
- ½ cup thinly sliced red onion
- ½ jalapeno pepper, sliced
- 2 pieces naan (Indian flat bread)
- 1 cup coarsely chopped spinach
- 1 cup shredded cheese - I used an Irish cheddar
- 2 eggs
Preheat the oven to 450° F.
Cook the breakfast sausage in a skillet until no longer pink. Turn off the heat and add the red onion and jalapeno to the mix; stirring lightly to combine. Spoon the contents of the skillet onto a plate and set aside.
Add the naan to a baking sheet. Add half of the sausage, red onion, and jalapeno mixture to each piece of bread. Sprinkle half of the chopped spinach and shredded cheese on each piece of bread.
Bake the naan for 8-10 minutes or until the cheese has melted.
In the last few minutes of the baking process, heat the skillet you used to cook the sausage over medium heat - do not wash before you do this. Crack the 2 eggs in the skillet and season with salt and pepper as desired. Cook the eggs to your desired level of firmness - the ones pictured in this article are over medium style.
Once the pizzas are done, gently slide one fried egg on top of each of the pizzas and serve immediately.
