- ½ c. butter, softened
- ½ c. granulated sugar
- ½ c. powdered sugar
- ½ c. canola oil
- 1 large egg
- 1 tsp. vanilla extract
- 1 lemon (zest and juice)
- 2 ¼ c. all-purpose flour
- ½ tsp. baking soda
- ½ tsp. cream of tartar
- 3 T. coarse sugar
Preheat the oven to 350° F. Line cookie sheets with silicone baking mats.
In a large mixing bowl, cream together the softened butter, granulated sugar ,and powdered sugar. Add the oil, egg, vanilla, lemon juice, and lemon zest. Mix well until combined.
In a medium-sized bowl, combine the flour, cream of tartar, and baking soda.
Carefully add the dry mixture to the liquid mixture, mixing until thoroughly combined and a batter forms.
Using a cookie scoop, drop the dough onto cookie sheets about three inches apart.
Sprinkle each cookie with coarse sugar or decorator’s sugar.
Bake in the preheated oven for 12-15 minutes or until lightly browned. Allow the cookies to cool before storing in a sealed container.
