- 6 oz. halloumi
- 1 head of romaine lettuce, washed and chopped
- ½ English cucumber, halved and sliced
- 8 oz. grape tomatoes, halved
- 4 oz. salad olives, sliced thin
Place the halloumi, whole, in a small nonstick skillet and heat over medium-high heat until sizzling and heated through. Remove and chop into bite-sized pieces and add to a large serving bowl.
Wash and chop the romaine. Slice the cucumber, tomatoes, and olives. Toss all of it together and serve with the vinaigrette of your choice or no dressing if you prefer.
