Select the fideo noodles that are braided into a coiled shape, rather than the straight short noodles sometimes sold by the same name. As a substitute, you can use thin-coiled Chinese style wheat flour noodles.
- 1 package Fideo noodles
- 1 small can tomato sauce plus 2 cans water
- 4 cloves garlic, crushed and chopped
- 3 Tbsp. olive oil
- Salt and pepper to taste
- 10 sprigs cilantro, coarsely chopped
- Freshly grated Parmesan cheese
To prepare, heat the olive oil in a skillet over medium heat. Add the chopped garlic and whole Fideo noodles. | |
Stir and turn the noodles until lightly browned on both sides, about 4 minutes. Add the tomato sauce, water, salt and pepper. | |
Cover and simmer for 10 minutes over low temperature and then stir to separate the noodles. | |
After the noodles are separated, cover again and simmer for an additional 5 to 10 minutes or until the pasta is tender. Serve immediately and garnish with chopped cilantro and fresh grated Parmesan cheese.
