Fideo

Select the fideo noodles that are braided into a coiled shape, rather than the straight short noodles sometimes sold by the same name. As a substitute, you can use thin-coiled Chinese style wheat flour noodles.
  • 1 package Fideo noodles
  • 1 small can tomato sauce plus 2 cans water
  • 4 cloves garlic, crushed and chopped
  • 3 Tbsp. olive oil
  • Salt and pepper to taste
  • 10 sprigs cilantro, coarsely chopped
  • Freshly grated Parmesan cheese
To prepare, heat the olive oil in a skillet over medium heat. Add the chopped garlic and whole Fideo noodles.
Stir and turn the noodles until lightly browned on both sides, about 4 minutes. Add the tomato sauce, water, salt and pepper.
Cover and simmer for 10 minutes over low temperature and then stir to separate the noodles.
After the noodles are separated, cover again and simmer for an additional 5 to 10 minutes or until the pasta is tender. Serve immediately and garnish with chopped cilantro and fresh grated Parmesan cheese.
