Welcome to Seasoned Cooking and to Phil's International Flair!
Things are progressing on the home front now that Phil's Fine Foods, Inc. is finally incorporated. I must say that this is quite a turn of events in contrast to working in the high technology arena for so long. However, cooking has always been a passion of mine and this seems like a very natural turn of events. Soon, we intend to offer Grillmate Gourmet Sauce online and in the markets, as well as a series of cookbooks for readers to enjoy.
The first book scheduled for release will be offered in electronic format with printable recipes. The theme of this book will be Mexican cuisine, and it is being co-authored by my cousin, Sandy Badillo. We first thought to title the book Cousin's Cuisine. However, this didn't really say much about the content. So, at the time of this writing, we are in the process of selecting a new name for the book.
While we do that, let me share a simple recipe that was passed down by my mother. My Grandmother Louisa used to make this recipe for a quick and easy lunch, snack, or dinner. This dish only takes about 25 minutes to prepare and is very economical as a main course, snack, or side dish.
The recipe presented this month is from my first soon-to-be-published Mexican cookbook scheduled for release sometime in January 2003. Please watch for an announcement soon so you can find out how to obtain a copy.

Now, on to the recipe!
Fideo
- 1 package Fideo noodles
- 1 small can tomato sauce plus 2 cans water
- 4 cloves garlic, crushed and chopped
- 3 Tbsp. olive oil
- Salt and pepper to taste
- 10 sprigs cilantro, coarsely chopped
- Freshly grated Parmesan cheese
To prepare, heat the olive oil in a skillet over medium heat. Add the chopped garlic and whole Fideo noodles. | |
Stir and turn the noodles until lightly browned on both sides, about 4 minutes. Add the tomato sauce, water, salt and pepper. | |
Cover and simmer for 10 minutes over low temperature and then stir to separate the noodles. | |
After the noodles are separated, cover again and simmer for an additional 5 to 10 minutes or until the pasta is tender. Serve immediately and garnish with chopped cilantro and fresh grated Parmesan cheese.
