- 3 c. roughly chopped and/or trimmed vegetables - approximately similar sizes
- ½ c. canola oil
- ¼ c. fresh lemon juice
- 1 T. everything bagel seasoning - available at many markets or make your own
Combine all of the ingredients in a large bowl or resealable plastic bag. Stir (or seal and toss) until the vegetables are evenly coated in the juices and seasoning. Allow to rest while you prepare the grill.
Prepare a grill by setting a cast iron grill plate in the center of your grill and heating it over medium-high (400°F) heat. Add the vegetables to the plate, close the lid, and set a timer for 5 minutes. Open the lid and turn the vegetables. Check them as you turn them. Some items - like onions and tomatoes - might need to be removed already. Close the lid and set the timer for another 5 minutes. Continue with this technique until all of the vegetables are cooked to your liking. Serve alongside steaks, pork chops, chicken, or chopped and tossed with a vinegar-based dressing for a great summer salad.
