- 2-3 sweet potatoes (about a pound), peeled and chopped into bite-sized pieces
- 1 small yellow onion, peeled and chopped
- 2 cloves garlic, minced
- 1 T. cooking fat (I used canola oil)
- 2 oz. crumbled blue cheese
- 4 eggs, fried to suit your preferences
Preheat the oven to 400° F. Lightly spray a baking sheet with cooking spray.
Combine the sweet potatoes, onion, garlic, and cooking fat on the baking sheet and toss well to evenly coat everything with the cooking fat. Roast the vegetables in the preheated oven for 20-30 minutes or until the sweet potatoes are tender and the onions are lightly browned.
While the vegetables are roasting, fry the eggs to your specifications. To serve, spoon some of the roasted vegetable mixture onto a plate or large bowl and sprinkle generously with the crumbled blue cheese. Top immediately with a fried egg and enjoy!
