- 2/3 cup butter or margarine
- 2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking powder
- 3/4 teaspoons nutmeg
- 1/2 cup flaked coconut
Prepare your pizza pan by coating it lightly with a cooking spray and then set aside until needed. Preheat the oven to 350 degrees Fahrenheit.
Using a medium-sized saucepan, you will add the butter and sugar and then melt them over a medium heat setting. Continually stir as the mixture melts in the pan for a couple of minutes. Remove from heat and allow it to cool for about 10 minutes.
After cooling, stir in the eggs one at a time, using a wooden spoon. Stir in the vanilla to mix thoroughly. Gradually add the flour and mix well. Add the baking powder and nutmeg and then combine until well blended together, and then stir in the coconut flakes.
Spread this crust mixture onto the prepared pizza pan evenly. Place in the preheated oven to bake for about 25 to 30 minutes or until done and the edge of the pizza is golden brown in color.
Remove from oven and allow the crust to cool to the touch before adding any of your family favorite ingredients as fillings and toppings for your holiday eggnog pizza crust.
