Cake:
- Nonstick cooking spray
- 4 eggs
- 2 c. white sugar
- 2 tsp. vanilla extract
- 2 c. all purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 T. butter -- melted
- 1 c. milk
Frosting:
- 6 T. butter -- melted
- 3/4 c. brown sugar
- 6 T. sour cream
- 1 3/4 c. flaked coconut
Preheat the oven to 350 degrees F.
Spray a 9 by 13-inch glass baking dish with the nonstick spray and set aside.
In a large mixing bowl, beat together the eggs, white sugar, and extract. Set aside.
In a medium bowl, whisk together the flour, baking powder and salt. Combine the 2 tablespoons of butter and the milk. Carefully add the milk mixture and flour mixture, alternating, to the egg mixture. Beat until smooth. Pour the mixture into the prepared baking pan. Bake in the preheated oven for 40-45 minutes or until the cake is risen and golden brown. Cool.
In a bowl, beat the 6 tablespoons of melted butter and the brown sugar until smooth. Add the sour cream and beat until creamy. Stir in the coconut flakes. Pour the mixture over the cooled cake and spread evenly. Preheat the broiler on high and broil for 2-4 minutes or until the frosting bubbles and turns light brown. Do not over-broil!
