While cake is a lovely thing unto itself, there's something magical about what happens when you add the right frosting. This month, I've got a very special combination to share with you. With Mother's Day happening this month, there's something wonderful about being able to share a moist, rich cake with a special broiled frosting. That's right, it's a frosting that's spread onto your cake and then tossed under the broiler for a few minutes until it's bubbling and golden brown.
Because you bake it in a 9 x 13-inch baking pan, it's important to choose one that can handle being under the broiler for a few minutes. You can use most glass pans, but be certain to cool the pan on hot pads and keep it from cold surfaces when you remove it from the broiler. Otherwise, an unpleasant surprise might await you!
This is a very rich dessert and really wants to be served with hot coffee or milk. Beyond that, there's nothing else it requires except a little slice of quiet to enjoy it in. Ideally, a little slice you can share with Mom. After all, it's her day!

Daisy Cake
Cake:
- Nonstick cooking spray
- 4 eggs
- 2 c. white sugar
- 2 tsp. vanilla extract
- 2 c. all purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 T. butter -- melted
- 1 c. milk
Frosting:
- 6 T. butter -- melted
- 3/4 c. brown sugar
- 6 T. sour cream
- 1 3/4 c. flaked coconut
Preheat the oven to 350 degrees F.
Spray a 9 by 13-inch glass baking dish with the nonstick spray and set aside.
In a large mixing bowl, beat together the eggs, white sugar, and extract. Set aside.
In a medium bowl, whisk together the flour, baking powder and salt. Combine the 2 tablespoons of butter and the milk. Carefully add the milk mixture and flour mixture, alternating, to the egg mixture. Beat until smooth. Pour the mixture into the prepared baking pan. Bake in the preheated oven for 40-45 minutes or until the cake is risen and golden brown. Cool.
In a bowl, beat the 6 tablespoons of melted butter and the brown sugar until smooth. Add the sour cream and beat until creamy. Stir in the coconut flakes. Pour the mixture over the cooled cake and spread evenly. Preheat the broiler on high and broil for 2-4 minutes or until the frosting bubbles and turns light brown. Do not over-broil!
