- 1 lb. mild Italian sausage
- ¾ cup chopped onions
- ¾ cup chopped leeks
- 3 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 2-3 medium potatoes, washed and chopped - peeled if you prefer
- 4 cups chicken or vegetable broth
- 1 cup frozen peas
- 1 cup coarsely shredded carrot
Set your Instant Pot to the Sauté Setting and brown the sausage fully. Add the onion, leek, garlic, and Italian seasoning and cook for another 3-4 minutes until the vegetables are very fragrant. Add the potatoes and broth and place the lid on the Instant Pot, making sure it is set to seal. Set the Instant Pot to cook for 15 minutes at high pressure.
Once the cycle has ended and the Instant Pot has beeped, do a quick release and add the frozen peas and shredded carrots. Replace the lid of the Instant Pot and let it rest for 15 minutes - still on the Keep Warm Setting - before opening, stirring, tasting and adjusting seasonings to your taste, and serving in bowls.
