- 2-3 slices thick cut smoked bacon
- 2 eggs
- 2 really nice bagels - I used some puffy asiago ones
- 2 T. mayonnaise
- 1 ripe tomato, sliced
- 1 handful fresh basil
Cook the bacon slices and the eggs to your liking (I like to opt for over medium or over hard for the eggs to keep things from getting too messy). While the bacon and eggs are cooking, toast the bagels, if desired. Slather each bagel with a tablespoon of mayonnaise and layer the tomato slices, basil, bacon (you'll likely want to cut each slice in half to help it fit better on the bagel), and egg to make a fantastic breakfast sandwich. Enjoy immediately.
