Apple & Roasted Beet Salad

  • 4 cups loosely packed spinach, torn
  • 2 cups roasted beets, skins removed and coarsely chopped
  • 1 Granny Smith apple, cored and chopped
  • ½ cup candied pecans
  • 3 tablespoons pepitas
  • ½ cup dried cranberries
  • ¼ cup goat cheese, crumbled

To assemble the salad, arrange the greens first, then add the beets, apples, nuts, seeds, dried fruit, and cheese. Serve immediately. If you want a dressing for this salad - none is really needed - a fruity vinaigrette is great.

  • Yields: 6 servings
  • Preparation Time: 15 minutes, assuming you already have roasted beets on hand
