- 4 cups loosely packed spinach, torn
- 2 cups roasted beets, skins removed and coarsely chopped
- 1 Granny Smith apple, cored and chopped
- ½ cup candied pecans
- 3 tablespoons pepitas
- ½ cup dried cranberries
- ¼ cup goat cheese, crumbled
To assemble the salad, arrange the greens first, then add the beets, apples, nuts, seeds, dried fruit, and cheese. Serve immediately. If you want a dressing for this salad - none is really needed - a fruity vinaigrette is great.
