- 2 c. all-purpose flour
- 1 T. ground cinnamon
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 c. granulated sugar
- ⅔ c. canola oil
- 2 eggs, lightly beaten
- ¼ c. plain yogurt
- 1 ½ tsp. vanilla extract
- 1 ½ c. chopped, peeled apples
Preheat the oven to 375ºF. Line a 12 cup muffin pan with paper liners; set aside.
In a medium bowl, stir together the flour, cinnamon, baking powder, baking soda, and salt.
In another bowl, stir together the canola oil and the granulated sugar. Stir in the eggs, plain yogurt, and vanilla. Pour the wet ingredients into the dry ingredients and stir just until combined. Gently stir in the apples.
Spoon the mixture into the prepared muffin pan, dividing the batter equally between the cups.
Bake the muffins until a tester inserted in the center comes out clean, about 20 minutes. Let the muffins sit in the pan before removing to a cooling rack to cool completely.
These muffins freeze well.
