- 4 Yukon gold potatoes
- 1-2 cups whole shishito peppers
- 2 tablespoons olive oil
- 2 teaspoons lemon pepper seasoning
- ½ lemon, sliced thin
- 2 tablespoons sliced green onions
Scrub the potatoes and chop them into bite-sized pieces.
Add the chopped potatoes and shishito peppers to a bowl.
Add the olive oil and lemon pepper seasoning on top of potatoes; toss to coat.
Pour the potatoes and peppers into an air fryer. Cook at 400 degrees for 20-30 minutes, turning as needed.
Add lemon slices to the bottom of a serving bowl and turn the air fried potatoes and peppers into the bowl; sprinkle with green onions and serve.
