This one's baked to ooey gooey goodness and served with chips. Choose some thick ones, this dip is hearty. Imagine all the goodness associated with a sloppy pulled pork sandwich in a bubbly dip. Make pulled pork a day or two beforehand and save a bit less then two cups of the pork and you're already most of the way to this amazing dip. I love recipes like this!
Now, as is usually the case, there are some ways to tweak this recipe. You can change around the green and red onions to use other (or no) onions. You can add chopped pepper or even some diced avocado. The choice of cheese is up to you, of course. You can pick your favorite bottled BBQ sauce or make your own. BBQ Pulled Pork Dip
- 2 (8-ounce) packages cream cheese, softened
- ¼ cup BBQ sauce
- ½ teaspoon garlic powder
- 1½ cups slow-cooked pulled pork
- ⅓ cup corn
- ⅓ cup black beans
- ⅓ cup chopped red onion
- 1 cup shredded cheese — choose your favorite variety or blend
- 2 green onions, sliced
- Additional BBQ sauce for serving
Preheat the oven to 375° F and lightly grease a casserole dish or medium sized oven-proof skillet.
In a large bowl, stir together the cream cheese, BBQ sauce, and garlic powder until a smooth mixture forms. Stir in the pork, corn, black beans, red onions, and half of the shredded cheese.
Transfer the mixture to the prepared casserole dish or skillet. Bake for 15 minutes. Remove from the oven and sprinkle the remaining cheese on top. Bake for another 10-15 minutes to melt the cheese. Sprinkle with the sliced green onions and drizzle with additional BBQ sauce. Serve with thick corn chips for dipping.
