When lunch time rolls around, I often just help myself to leftovers I have on hand or toss together a quick sandwich. But sometimes I am lucky enough to have such a wonderful handful of ingredients on hand that a beautiful salad like this nearly makes itself and I just have to enjoy it:
Happily, summer tends to put a lot of fresh produce in my possession and I make sure I always have some sharp, tart, and creamy cheeses on hand. Beyond that, you could do things like add a sprinkling of crunchy nuts — like almonds or walnuts — or some dried fruit — like craisins or slivered dates. This time around, I kept it very simple with just a handful of ingredients. After all, it was lunch.
If I wanted to get fancy for a dinner or maybe a weekend brunch salad, I'd probably add craisins, sliced red grapes, slivered almonds, and maybe a few snipped chives. And I'd make a lot more, because I don't think the rest of my family would tolerate me leaving them out of this delicious treat!
Blackberry Chèvre Salad
- 1 large handful of chopped romaine lettuce
- 1/2 sliced avocado
- Generous handful of fresh blackberries
- 2 T. crumbled chèvre
- Dressing of your choice (I used a light honey mustard)
On a large serving plate, layer the ingredients, starting with the lettuce and ending by drizzling your choice of salad dressing over the top. Serve immediately.
