I usually use my microwave for warming leftover, cold coffee and making popcorn. But sometimes, when things get really busy, I like to put it into service for breakfast. One of my favorite quick breakfasts is a sandwich that has nearly all its components made in the microwave.
If you don't have a toaster, you can skip toasting the English Muffin. However, I'd highly recommend giving it a try! It adds extra texture and helps keep things from getting too mushy! Add a cup of coffee and a piece of fruit and this tidy little sandwich can really keep you going! Yum!

Microwave Breakfast Sandwiches
- Cooking spray
- 1 egg
- 1 English muffin
- 2 tsp. grainy mustard
- 1 frozen fully cooked breakfast sausage patty
- 1 slice cheddar cheese
Spray a custard cup with cooking spray and crack the egg into it. Using a fork, pierce the egg several times. Cover lightly with waxed paper or a small plate and microwave on HIGH for one to two minutes.
Meanwhile, toast the English muffin and spread with the mustard when it's done.
Cook the breakfast patty in the microwave according to the manufacturer's instructions.
Place the egg, patty and slice of cheese on the English muffin and serve immediately.
