The day after Thanksgiving calls for simple food that satisfies without stuffing you. For me, that means a departure from the traditional dishes of the day before that takes advantage of the leftovers. So, at my home, we often enjoy a turkey dish that's simple and unique.
Keeping with that equation, I'm offering a recipe for a simple stir-fry that combines some fresh vegetables, shredded leftover turkey and an easy sauce made from some convenience items that are usually on hand at my house. Feel free to tweak the ingredient list to suit your tastes and the contents of your pantry! Have a Happy Thanksgiving ... and enjoy those leftovers!!!

- 1 T. peanut oil
- 1 small onion, cut into thin wedges
- 1 red pepper, cut into strips
- 8 oz. snap peas
- 1 c. shredded turkey
- 1/4 c. hoisin sauce
- 2 T. honey
- 1 tsp. hot chili-garlic sauce
- 2 tsp. toasted sesame seeds
- 2 c. cooked brown rice
Heat the peanut oil in a large skillet over high heat. Add the onion and red pepper and stir-fry for 3 minutes or until crisp tender. Add the snap peas and stir-fry an additional minute.
Add the turkey and toss to combine.
In a small dish, combine the hoisin sauce, honey and chili-garlic sauce. Add to the skillet and toss well to coat. Sprinkle the sesame seeds over the mixture and serve immediately over hot brown rice.
