Welcome to Seasoned Cooking and to Phil's International Flair!
Louisa's Kitchen, an electronic cookbook in PDF format is now available. You may order the book using a credit card or PayPal at the following link: http://www.grillmates.biz. We have already sold a few copies and hope to sell many more. My next project is to complete my Grilling with Grillmates cookbook that will feature methods and techniques for grilling and smoking meats, fish, fowl and vegetables. Watch for this book to be released by the end of this month.
I must say that making the transition from the high tech industry to the food industry is a bit scary, yet very exciting. With the help of my friend, Rob (from http://www.colbert-video.com), we produced a pilot video that we hope to refine to a series of cooking shows for DVD and possibly television. Some of the cooking demonstrations that we taped will be offered for sale in the very near future. Be sure to bookmark the grillmates.biz site and refer to it often for the recipes and products that will be offered. Much material will be uploaded in the coming weeks.
To gather some interest in Grilling with Grillmates and Grillmate Gourmet Sauce, I will present a sample recipe for Seasoned Cooking readers this month. I prepared these wings for a dinner party recently and they were gone in minutes!
Now, on to the recipe! Be well, and good eating!
Oven BBQ Chicken Wings
- 2 lbs. chicken wings, tips trimmed
- Grillmate Gourmet Sauce or Phil's BBQ Sauce
- Salt and pepper to taste
If the chicken wings are whole, trim the tips off with a sharp knife or cleaver. Pre-frozen chicken wing segments will work as well. Preheat the oven to 375 degrees F, and place the wings in a roasting pan. Season the wings with salt and pepper. Use convection cooking if available on your oven.
Place the roasting pan with wings into the preheated oven to bake for 15 minutes before turning the wings using tongs. Bake for 20 minutes if the wings are frozen. Bake for an additional 15 to 20 minutes and then coat the wings with sauce. Return to the oven for the sauce to caramelize 2 to 3 minutes. Turn the wings once again and spread the sauce on the reverse side. Caramelize in the oven for an additional 2 to 3 minutes. You may get the sauce to caramelize quickly by broiling the wings for the last couple of minutes. Finish by basting the wings with additional sauce before serving.
