Every once in a while, I tweak a cookie recipe to make a bar recipe or vise versa. This month's recipe is a perfect example of just that. While enjoying a chewy lemon cookie at a friend's house, I asked for the recipe. While it's a terrific recipe as is, I thought it would be fun to make it into a large pan of bars to offer for dessert after a casual meal of homemade chili.
What's truly wonderful about these bars is that they are so incredibly easy to make. Then, when you're serving them, you can sprinkle them lightly with powdered sugar and dollop them with a touch of whipped cream. Yum!

Easy Dreamy Lemon Bars
- 1 lemon cake mix -- 18.25 oz.
- 1 container sour cream -- 8 oz.
- 1 egg
- 2 T. margarine -- softened
- 1/4 tsp. lemon extract
- Cooking spray
Preheat the oven to 350 degrees. In a large bowl, combine the cake mix, sour cream, egg, margarine and extract. Mix well by hand. Spray a 9 x 13-inch glass baking pan with cooking spray and carefully press the batter into the pan.
Bake for 25-35 minutes or until the top of the bars are golden brown. Cool completely before cutting.
