I like to use a slightly tangy, firm apple in this recipe. My favorite is Macintosh -- but use whatever is readily available to you. If you want a slightly peppery flavor in this dish, try a Bavarian mustard instead of honey mustard. This recipe calls for cod fillets, but any firm-fleshed white fish will do.
This dish takes about 30 minutes to prepare and most of that is time in the oven. You can make some rice and fresh green beans in the time it takes to cook in the oven. Add your favorite beverage and you can call it dinner! Enjoy!
Fish & Apples
- 1 lb. cod fillets
- 1 medium apple, cored and sliced
- 2 T. honey mustard
- 1 T. white wine, optional
Preheat oven to 350 degrees.
In a deep baking dish, arrange the cod fillets in a single layer. Arrange the sliced apples evenly over the fillets.
Combine the mustard and wine in a small bowl; mix well. Pour over the fish and apples. Carefully, add enough water to the bottom of the pan to cover 1/2 the thickness of the fillets-- making sure that you don't splash the mustard-wine mixture off of the fish. Cover the baking dish with aluminum foil and bake for 20-25 minutes or until the fish flakes easily with a fork. Serve immediately.
