Slow Cooker White Chicken Chili

  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp salt
  • 1/2 - 1 tsp. dried crushed jalapeño peppers (you could use fresh diced peppers or all/a portion of a can of green chiles, instead)
  • 14 oz. chicken stock
  • 3 frozen boneless, skinless chicken thighs
  • 1 can great northern beans, undrained

Combine all of the ingredients in a slower cooker. Cook on low 6-8 hours. Stir the mixture before serving to break the chicken into smaller pieces. Serve with sour cream, extra hot sauce, shredded cheese, diced avocado, corn chips, and/or fresh cilantro.
