- 2 c. butter cracker crumbs (such as Ritz)
- 1 T. dried parsley
- 1 T. garlic powder
- 1 (16 oz.) package frozen ravioli
- 2-3 T. mayonnaise
- Cooking spray
- 2 ripe plum tomatoes - chopped
- 3 basil leaves - thinly sliced
- 1 T. extra virgin olive oil
- 1 T. balsamic vinegar
- Salt & pepper, to taste
Preheat the oven to 400° F.
Line a baking sheet with a silicone baking mat; set aside. Combine the cracker crumbs, parsley, and garlic powder in a shallow dish; set aside.
Using a brush, coat each frozen ravioli with mayonnaise before rolling gently in the crumb mixture.
Place each ravioli on the prepared baking sheet. Spray each ravioli with cooking spray.
Once all of the ravioli have been breaded, bake them for 15-20 minutes, or until the ravioli are golden brown and crisp.
While the ravioli are baking, combine the remaining ingredients and, when the ravioli are done, serve them with the fresh relish.
