Chickpeas with Chorizo and Onions

  • 1 lb. fresh chorizo, casings removed
  • 1 large onion, peeled and sliced into thin wedges
  • 1 (15 oz.) can chickpeas, drained

Place the fresh chorizo in a large nonstick skillet and begin to fry over medium-high heat, stirring regularly. About 5 minutes later, add the onion and continue frying until the meat and onions are both cooked through. Add the chickpeas and stir to warm through.

If desired, other vegetables such as sliced peppers, cubed roasted squash, sweet or regular potatoes, leafy greens, etc. can be added at various stages of the cooking process. This is very much a foundational recipe and can be tweaked according to your tastes and what is in your refrigerator.
