Andrea Miller's Mexican Casserole

  • 1-2 lb. hamburger -- browned with taco seasoning added
  • 1 medium onion, chopped
  • 1 cup sliced olives or olive pieces
  • 1 can corn, drained
  • 2 cups chopped tomatoes (1 can chopped tomatoes can be substituted)
  • 1 can or box of Marie Callendar's cornbread mix

Preheat the oven to 350 degrees F.

Place the browned ground beef, onions, olives, corn, and tomatoes in a greased baking dish.

Pour one can or box of Marie Callendar's cornbread mix over the top and bake for about 30 to 45 minutes or until the cornbread is done. For a moister casserole, add one can of tomato sauce before putting the cornbread on top.
