Air Frying Breakfast

What if I told you that a quick, healthy, downright beautiful side dish for your breakfast and brunch meals was just an air fryer away? Move over standard taters, it's time to bring some color to the breakfast plate! A blend of chopped red pepper, tender sweet potatoes, and sliced baby turnips will help provide a side dish that's at home in any morning lineup.

Can you switch up the vegetables? Yes. Pick similar types of options in a variety of colors and you should be good to go. If you have some picky eaters at the table, consider swapping the baby turnips for some standard spuds and let the sweet potatoes and red pepper do a bit of heavy lifting. You get the idea. I used some melted compound butter featured at the end of last month to season my veggies, but you can opt for seasoned oil or just make your own.

As pictured above, this blend of air fried vegetables does well with eggs, greens, toast, and more. It can be served alongside baked goods or pancakes or any breakfast sandwich. The options are vast and the timing is fast. What's not to love? Enjoy!

Air Fried Breakfast Veggies

  • 3 tablespoons Fish Sauce Butter - or other seasoned butter or oil of your choice
  • 6 baby turnips, sliced in half - leave some of the greens attached
  • 1 small sweet potato, cleaned and cut into bite-sized cubes
  • 1 red bell pepper, cored and chopped

Melt the compound butter and toss with the assembled vegetables.

Place the vegetables in the basket of your air fryer and set it to cook at 400° F for 20 minutes. Turn the vegetables halfway through the cooking process.

When the air frying cycle has finished, carefully spoon the veggies onto plates and serve alongside eggs, bacon, toast, and any other number of breakfast or brunch dishes.
