Continuing our week of great chicken recipes that use cooked chicken - think rotisserie chicken - to bring fantastic and creative dinners to your table, this time it's pizza night. And not just any pizza. This is fusion food at its finest. Chicken curry meets pizza and it's all bliss! If you're a fan of both dishes, the marriage of the two will have you celebrating the union at the dinner table.
I like to make my homemade pizza dough in my bread maker. There are also lots of great recipes for making it by hand too. And, of course, many a market has dough rounds ready for purchase. There's an Italian deli near my home that I love getting dough when I'm in a rush from. Choose what works for you. Likewise, a store bought curry sauce will work just fine here. So will any number of leftover. In my case, I'd just made the Quick Curried Salmon I shared last week and had some extra sauce. It was perfect for this. As for peppers, if you want it hotter, make them all hot peppers. If you want to tame the pizza, stick with sweet peppers. You can make the mix suit your preferences. I love the green beans on this pie, but you could also use torn spinach, or even okra on this fun pizza.
I just pour a nice beer or cider for a dish like this. No need for anything on the side at all. If I'm feeling fancy, I'll make a cocktail featuring lemon and ginger beer since both of those ingredients play nicely with cuisines from both India and Italy. Just sit back and enjoy a slice or three!
Chicken Curry Pizza
- 2-3 teaspoons olive oil
- 1 round of pizza dough - store bought or homemade
- ½ cup curry sauce - store bought or homemade (I used some leftover quick curry from Quick Curried Salmon
- 1 ½ cups chopped or shredded cooked chicken - I used rotisserie chicken
- 1 tablespoon coconut oil
- ½ cup sliced hot peppers
- ½ cup sliced sweet peppers
- 1 cup trimmed and 1" cut green beans
- ⅔ cup crumbled goat cheese
Preheat the oven to 450° F.
Rub a 10-12 inch cast iron skillet evenly with the olive oil, coating the bottom and sides of the skillet. Press the dough evenly over the bottom and halfway up the sides of the skillet.
Toss the curry sauce and the chicken together to evenly coat the chicken. Spread all of it over the bottom of the dough in the pan.
Heat the coconut oil over medium-high heat in a skillet or sauté pan. Add the peppers and green beans and sauté until crisp-tender and the edges of it all are slightly browned. Cool a little and then add to the top of the pizza. Sprinkle the top of the pizza with the crumbled goat cheese.
Bake the pizza in the preheated oven for 16-18 minutes or until the edges are puffy and crisp. Allow the pizza to rest for 5-10 minutes before slicing and enjoying.
