Banana Bread Waffles

Brunch Week continues with a fun waffle recipe that blends the flavor of banana bread with your favorite morning meal. These waffles are fantastic and if you happen to be lucky enough to have one or two left, you can freeze them and warm them in a toaster for a quick and decadent breakfast during the week. Now how's that for a gift that keeps on giving?

I do not recommend changing the waffle recipe. If you want to tweak, keep it limited to what you top them with. Of course, bananas, nuts, and maple syrup are traditional options. I opted for sliced pears and maple syrup because I adore pears and soon it will be challenging to find ones that are as lovely as the ones topping this stack of waffles.

The waffles are a meal in and of themselves, but a side of bacon or sausage, some roasted potatoes, or a fresh fruit salad would all be lovely alongside these. If they are the star of the show for a Mother's Day brunch buffet, consider a selection of muffins and pastries (both sweet and savory) for everyone to nibble while you prepare them. And make sure you get a bite in too! Enjoy!

Banana Bread Waffles

  • 1 ½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup milk
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 tablespoons melted butter, cooled
  • ¾ cup mashed bananas, about 2 medium bananas

Heat the waffle iron according to the manufacturer's instructions.

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

In a medium bowl, whisk together the milk, brown sugar, vanilla extract, eggs, and melted butter. Stir in the mashed bananas.

Gently fold the wet ingredients into the flour mixture, being careful not to over mix.

Lightly grease the waffle maker and pour about ½ cup of the batter into each waffle cavity (refer to waffle iron instructions for specific amounts). Cook for 4-6 minutes or until the edges are golden. Keep warm in a 200°F oven until ready to serve.
