Mapping Flavor

In reading through a pile of food-related blogs, recipe sites, and recommended reading, I came across a food blog belonging to NPR with an article tempting me to consider What A Global Flavor Map Can Tell Us About How We Pair Foods. It's a fascinating read and links to a study by the folks at the University of Cambridge, who set about to discover how the flavors used in various regional cuisine gets paired and what that can tell us about various ethnic foods. The map (yep, there's an actual map) is truly amazing and I wonder if poster-sized copies will end up framed and hanging in kitchens all over the world. It certainly wouldn't hurt to understand more about our world and the food we consume to keep ourselves functioning within it! These are the kinds of fascinating facts you may learn from an online culinary arts school.
