Welcome to the February issue of Seasoned Cooking. This month, we celebrate 12 years of bringing you great recipes, fun kitchen tips and discussion on culinary techniques and ingredients. We've had a great time doing so and look forward to many more years of sharing our time, talent and ideas with you. Do us a favor and let us know what you think of what we're sharing and how we're doing. At the end of each article is a feedback form. Use them! We read your comments and love hearing about how you use what we share and any questions you might have.

This month brings us a combination of fire and ice. Valentine's Day brings us moments of joy and passion and we're here to make the culinary part of your celebrations great, while February shares some of the year's coldest weather with us. Never fear. We have a wide range of soups, stews and casseroles to help warm you, heart and soul. Let's begin our issue tour.

We begin with a look at fire. Valentine's Day is devoted to love and we're doing out part to give you great ideas for celebrating. Sandra Lee brings us her special Valentine's Day sweetheart supper menu, complete with a lovers' cocktail. If you are looking for something different to serve for dinner, take a look at our encore look at Oysters with Champagne Sauce, brought to you by Phil's International Flair. You can't get more elegant than this! And it wouldn't be Valentine's Day without chocolate! The Ingredient SpotLight focuses on chocolate, how it can actually be good for you, and a selection of recipes that are ideal for a sweet finish to a romantic dinner.

But as much as Valentine's Day might be fun to plan, it is but one day of an entire month. So we're also catering to battling the winter blahs, too. Begin with a visit to Through the Kitchen Window and a look at two of Rossana's favorite soups. If stew is more to your liking, the Rush Hour column has a creative one that combines chicken and smoky sausage. And if that's not ideal, consider some of the casseroles featured in the Kitchen Focus and our special feature on freezable chicken casseroles. Finally, you'll want to enjoy the epitome of comfort food with one of the two cobbler recipes presented in the Happy Endings column.

There is a lot more to be discovered in this issue. Enjoy it and share it with your friends.
