- 1 pkg. devil's food cake mix
- 1 c. oatmeal
- 1 egg
- 1/2 c. olive oil
- 2 T. strong coffee
- 1/2 c. golden raisins
- 12 oz. chocolate chips
Preheat the oven to 350 degrees.
Mix the cake mix, oatmeal, egg, oil and coffee until well blended. Stir in the raisins and chocolate chips. Drop the dough by rounded teaspoonfuls onto an ungreased cookie sheet -- allowing about 2 inches between each cookie. We used a small disher that held one ounce of batter to make sure we had cookies of similar shape and size.
Bake the cookies for 8-10 minutes. Allow them to cool on the cookie sheet for 1-2 minutes before transferring them to a wire rack to cool. Store the cookies tightly covered at room temperature.
