West Indies Apple Chutney

  • 2 1/2 cups (one 1-lb, 4-oz can) sliced apples, undrained
  • 1/2 cup dark raisins
  • 3/4 cup molasses
  • 1/2 cup cider vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon each of ground ginger and dry mustard
  • 1 tablespoon curry powder

Mix all ingredients in a saucepan. Bring to boil, stirring to blend ingredients. Simmer, uncovered over low heat for 15 minutes, stirring occasionally.

  • Yields: 3 cups
  • Preparation Time: about half an hour
