- 8 oz. fresh baby spinach, torn
- 8 red lettuce, torn
- 2 oz. goat cheese, crumbled
- ¼ cup toasted pepitas
- ¼ cup candied pecans
- ¼ cup dried cranberries
- 6 oz. fresh raspberries
- 6 oz. fresh strawberries, hulled and sliced
Combine all of the ingredients in a large serving bowl and serve. Can be dressed lightly with a fruity vinaigrette or served as is. If you'd like to make it a main dish salad, add seared, sliced chicken or pork.
